Tunisian   -   Chicken Roast (Poulet Mehshi)   adapted from The Great Book of Couscous by Copeland Marks

Ingredients
  • 1 Tablespoon Olive Oil
  • 1 1/2 Pounds Potatoes -- cut 2 inch slices
  • 1 Large Onion -- finely chopped
  • 2 Medium Tomatoes -- finely chopped
  • 1 Medium Green Pepper -- finely chopped
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 3 Pounds Chicken -- in 6 pieces
  • 1 Cup Water
  • 4 Sprigs Parsley -- finely chopped
Directions Rub a baking dish with oil. Add in layers, potatoes, onion, tomatoes, green pepper, salt and pepper. Bake in 375 degree oven for 10 minutes. Remove and place chicken all over it. Return to oven for 30 minutes. Add water and sprinkle with parsley. Return to oven for 15 minutes. Serve.
