Tunisian   -   Chicken Strips With Mint   adapted from North African Cooking by Hilaire Walden

  • 1 Lemon Lemon Juice
  • 1 Teaspoon Olive Oil
  • 1 Tablespoon Mint
  • 2 Cloves Garlic -- Finely Chopped
  • Salt And Pepper -- To Taste
  • 2 Large Chicken Breast -- Cubed
Directions In a large bowl combine lemon juice, olive oil, mint, garlic and seasonings. Add chicken and marinate overnight. Thread on skewers that have been soaked for 30 minutes. Broil or barbecue for 4 minutes per side.
