Tunisian   -   Chicken Tagine With Tomatoes   adapted from North African Cooking by Hilaire Walden

  • 1 Large Chicken -- Cut Into Pieces
  • 3 Pounds Tomatoes -- Chopped
  • 1 Large Red Onion -- Grated
  • 2 Cloves Garlic -- Finely Chopped
  • 1/2 Teaspoon Saffron
  • 2 Teaspoons Cinnamon
  • 1/4 Teaspoon Ground Ginger
  • 1/3 Cup Olive Oil
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Honey
  • Sesame Seeds -- For Garnish
Directions Put all ingredients except honey and sesame seeds into a large dutch oven; heat to simmering; cover and cook for 1 hour; remove chicken and keep warm; boil the remaining liquid until well reduced; stir in honey; return chicken to casseole and cover with sauce; serve with sprinkeling of sesame seeds.
