Tunisian - Chicken With Haricot Beans (Poulet Aux Haricots)

Ingredients

- 1/2 Cup Dried Haricot Beans Or White Beans -- soaked overnight
- 1 Tablespoon Olive Oil
- 1 Large Onion -- finely chopped
- 3 Pounds Chicken -- cut into 6 pieces
- 3 Tablespoons Tomato Paste
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 1 Teaspoon Paprika
- 2 Teaspoons Ground Caraway
- 1 Teaspoon Turmeric
- 2 Cloves Garlic -- finely chopped
- 2 Cups Water

Directions
|
Cover beans with water and simmer for 45 minutes. Drain and set aside. Heat oil in pan and saute onion over moderate heat for 1 minute. Add chicken and fry for 5 minutes. Add tomato paste, salt, pepper, paprika, caraway, turmeric and garlic. Saute for 1 minute. Add water and beans, cook, covered for 45 minutes. Serve.
