Tunisian   -   Chicken With Haricot Beans (Poulet Aux Haricots)   adapted from The Great Book of Couscous by Copeland Marks

  • 1/2 Cup Dried Haricot Beans Or White Beans -- soaked overnight
  • 1 Tablespoon Olive Oil
  • 1 Large Onion -- finely chopped
  • 3 Pounds Chicken -- cut into 6 pieces
  • 3 Tablespoons Tomato Paste
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Paprika
  • 2 Teaspoons Ground Caraway
  • 1 Teaspoon Turmeric
  • 2 Cloves Garlic -- finely chopped
  • 2 Cups Water
Directions Cover beans with water and simmer for 45 minutes. Drain and set aside. Heat oil in pan and saute onion over moderate heat for 1 minute. Add chicken and fry for 5 minutes. Add tomato paste, salt, pepper, paprika, caraway, turmeric and garlic. Saute for 1 minute. Add water and beans, cook, covered for 45 minutes. Serve.
