Ingredients
  • 3 Pounds Large Shrimp
  • Olive Oil
  • Salt And Pepper -- to taste
  • Lime Wedge
  • *** Sauce Kerkennaise -- ***
  • 2 Medium Tomatoes -- chopped
  • 1/3 Cup Olive Oil
  • 1/4 Cup Parsley -- finely chopped
  • 2 Tablespoons Green Onion -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Hot Red Chili Peppers
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon Sugar
Directions Prepare sauce by mixing all ingredients. Chill. Dip shrimp in olive oil, then season with salt and pepper. Thread shrimp on skewers and grill over coals until pink. Serve with sauce and lime wedges.
