Tunisian   -   Fish In Tomato Sauce (Marka Bil Hout)   adapted from The Great Book of Couscous by Copeland Marks

  • 3 Tablespoons Olive Oil
  • 1 Large Onion -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 2 Large Potatoes -- in large chunks
  • 2 Cups Water
  • 2 Pounds Sea Bass -- or red snappper
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1 Large Tomato -- finely chopped
Directions Heat oil in pan and fry onion and garlic over moderate heat for 3 minutes. Add potato and water. Cover and cook over low heat for 15 minutes. Add fish, salt, pepper and tomato, cover and cook for 20 minutes. Serve with rice or couscous.
