Tunisian - Fish In Tomato Sauce (Marka Bil Hout)

Ingredients

- 3 Tablespoons Olive Oil
- 1 Large Onion -- finely chopped
- 1 Clove Garlic -- finely chopped
- 2 Large Potatoes -- in large chunks
- 2 Cups Water
- 2 Pounds Sea Bass -- or red snappper
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 1 Large Tomato -- finely chopped

Directions

Heat oil in pan and fry onion and garlic over moderate heat for 3 minutes. Add potato and water. Cover and cook over low heat for 15 minutes. Add fish, salt, pepper and tomato, cover and cook for 20 minutes. Serve with rice or couscous.
