Tunisian   -   Heavenly Scented Couscous (Tunisia)   adapted from Vivid Flavors

Ingredients
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Ground Cloves
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon Cardamom
  • 1/4 Teaspoon Coriander
  • 1/4 Teaspoon Fennel
  • 1 1/2 Cups Vegetable Broth
  • 1 Teaspoon Salt -- 1 can
  • 1 Tablespoon Mustard Oil
  • 1 Inch Ginger Root -- grated
  • 2 Cloves Garlic -- finely chopped
  • 1/8 Teaspoon Turmeric
  • 1 Pound Couscous
  • 2 Medium Potato -- cubed and cooked
  • 1 Medium Leek -- cubed and blanched
  • 1 Large Tomato -- cubed
  • Oil -- for sauteing
  • 1 Large Zucchini -- cubed
Directions combine spices down to stock in small bowl. Bring stock to a boil and keep hot. saute in mustard oil the spices, ginger, garlic and turmeric, Stir until fragrant about 30 seconds. Add couscous and stir to coat evenly. add hot stock and cover pan with lid. Remove from heat. Saute zucchini in oil for 5 minutes. Add to couscous and serve.
