Tunisian   -   Markit Ommalah   adapted from Traditional African Cooking

  • 1 Pound Beef -- diced
  • 1 Medium Onion -- finely chopped
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Pepper
  • 1 Teaspoon Coriander -- ground
  • 2 Tablespoons Tomato Puree
  • 1/2 Pound Blackeyed Peas
  • 1/2 Cup Olives -- green or black
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Vinegar
Directions Season meat with salt, pepper and coriander. Fry in the oil until well browned. Add onion and fry until golden brown. Stir in beans and remaining ingredients, except vinegar and olives. Cook until beans are warmed through. Stir in vinegar and olives and serve over rice.
