Tunisian   -   Shrimp Stew From Gabes (Gambry A La Gabesienne)   adapted from The Great Book of Couscous by Copeland Marks

  • 2 Tablespoons Olive Oil
  • 1 Small Onion -- finely chopped
  • 4 Cloves Garlic -- finely chopped
  • 1/2 Teaspoon Cumin
  • 1 Teaspoon Harissa (Tunisia)
  • 3 Pounds Shrimp
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 6 Sprigs Parsley -- finely chopped
  • 2 Tablespoons Lemon Juice
Directions Heat oil in skillet, add onion and garlic, saute for 1 minute. Add cumin and harissa and saute for 1 minute. Add shrimp, salt, pepper, parsley and lemon juice. Saute for 2 minutes. Cover the skillet and saute for 2 minutes. Remove and serve immediately.
Serves 6
