Tunisian   -   Tunisian Macaroni   adapted from The Great Book of Couscous by Copeland Marks

  • 2 Tablespoons Olive Oil
  • 1 Pound Beef -- cubed
  • 2 Cloves Garlic -- finely chopped
  • 1/4 Cup Chickpeas -- cooked
  • 2 Stalks Celery -- finely chopped
  • 5 Sprigs Parsley -- finely chopped
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 3 Tablespoons Tomato Paste
  • 3 Cups Water
  • 1 Pound Macaroni
Directions Heat oil in pan and add beef, garlic, chickpeas, celery, parsley, salt, pepper and tomato paste. Fry over moderate heat for 5 minutes. Add 2 cups water, cover and cook for 30 minutes. Add the rest of the water, bring to a boil and add the pasta. Cook for 15 minutes or until the pasta is cooked. Serve.
