Turkish   -   Cabbage Stew Ith Lamb And Jalapenos (Kapuska)   adapted from Classical Turkish Cooking by Ayla Algar

  • 1 Pound Lamb Or Beef -- cubed
  • 3 Tablespoons Unsalted Butter
  • 3 Large Onions -- finely chopped
  • 1/2 Teaspoon Crushed Red Pepper
  • 1 Tablespoon Paprika
  • 2 Large Tomatoes -- chopped
  • 2 Cups Beef Stock
  • Salt And Pepper -- to taste
  • 1 Medium Cabbage -- shredded
  • 4 Large Jalapeno -- chopped
Directions Saute meat in butter for 10 minutes. Add onions and saute 5 minutes. Stir in red pepper, paprika, and tomatoes. Cook for 2 minutes. Add 1 cup stock, salt and pepper. Cover and simmer for 1 hour. When meat is cooked, stir in cabbage and jalapenos, cover and cook for 5 minutes. Stir in remaining stock, cover and simmer for 30 minutes. Serve with a good chunk of bread.
