Turkish   -   Celery Root And Potatoes   adapted from Classical Turkish Cooking by Ayla Algar

Ingredients
  • 1 Large Onion -- finely chopped
  • 10 Cloves Garlic -- finely chopped
  • 1/3 Cup Olive Oil
  • 1 Small Celeriac -- peeled and diced
  • 2 Cups Water
  • Salt -- to taste
  • 3 Large Red Potatoes -- diced
  • 2 Large Carrots -- diced
  • 1/2 Teaspoon Flour
  • 1 1/2 Teaspoons Sugar
  • 1/2 Cup Lemon Juice
  • 1/2 Cup Parsley -- chopped
Directions Cook onions and garlic in olive oil 5 minutes. Add celery root, cook 2 minutes. Add water, salt, cover simmer 20 minutes. Add potatoes, cover simer 30 minutes. sprinkle flour over vegetables. Add sugar and lemon juice. Simmer until liquid thickens.
Stir in parsley and serve. Can also be served cold.
