Turkish   -   Mint Split Pea Soup   adapted from The Sultan's Kitchen by Ozcan Ozan

  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • 1 Small Onion -- Chopped
  • 1 1/2 Cups Split Peas
  • 6 Cups Chicken Stock
  • 1/4 Cup Cornstarch
  • 1 Tablespoon Mint
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Heavy Cream -- Optional
  • Croutons -- Optional
Directions Saute onion in butter and oil for 5 minutes. Add peas and stock. Cover and bring to a boil. Reduce heat and simmer for 30 minutes. Mix cornstarch with 1/4 cup water. Add to pot and bring back to a boil. Lower heat, add mint, season with salt and pepper. Simmer for 10 minutes. Add cream if using. Garnish with croutons and serve.
