Turkish   -   Onion And Green Lentil Pilaf   adapted from The Sultan's Kitchen by Ozcan Ozan

Ingredients
  • 1/3 Cup Lentils -- Cooked
  • 1/2 Cup Chick Peas -- Cooked
  • 4 Tablespoons Olive Oil
  • 2 Medium Onions -- Chopped
  • 1 Teaspoon Sugar
  • Salt And Pepper -- To Taste
  • 1 Lemon Lemon Juice
  • 1/2 Cup Rice
  • 1/4 Cup Orzo
  • 1 Can Tomatoes
  • 1 Tablespoon Cumin
  • 1 Teaspoon Red Pepper Flakes
  • 2 Cups Chicken Stock
  • 1/2 Bunch Parsley -- Chopped
Directions Saute onions, sugar, salt and pepper in oil, for 5 minutes. Add lemon juice and cook until oniosn are well browned, about 10 minutes. Add rice and orzo, simmer 2 minutes, add tomatoes, lentils, chick peas, cumin and red pepper, simmer 2 minutes, add stock, cover and simmer 20 minutes, stir in parsley, remove from heat and serve.
