Turkish   -   Potatoes With Tomatoes And Peppers   adapted from Classical Turkish Cooking by Ayla Algar

Ingredients
  • 3 Pounds Red Potatoes -- sliced
  • 3 Tablespoons Peanut Oil
  • 3 Tablespoons Unsalted Butter
  • 2 Large Onions -- chopped
  • 1/2 Pound Ground Beef
  • 2 Medium Anaheim Chili Pepper -- chopped
  • 2 Small Jalapeno -- chopped
  • 2 Large Tomatoes -- peeled ch
  • 2 Sprigs Thyme
  • 2 Sprigs Marjoram
  • Salt And Pepper -- to taste
  • 3/4 Cup Parsley -- chopped
  • 1 Large Tomato -- sliced
  • 1 Cup Water
Directions Fry potatoes in oil until done, set aside.
Saute onions in butter utnil brown.
Add meat and brown.
Add peppers, cook 1 minute.
Add toamtotes, thyme, marjoram, salt and pepper, simmer 5 minutes.
Add parsley, remove from heat. Preheat oven to 350* Layer 1/2 potatoes in casserole dish, spread 1/2 meat mixture, repeat. top with tomato slices, pour water over all, cook 45 minutes and serve.
