Turkish   -   Red Lentil, Bulgur And Mint Soup   adapted from The Sultan's Kitchen by Ozcan Ozan

Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1 Can Tomato Paste
  • 1 Can Tomatoes -- Diced
  • 2 Tablespoons Paprika
  • 1/2 Teaspoon Red Pepper Flakes
  • 1 1/2 Cups Red Lentils
  • 1/4 Cup Rice
  • 6 Cups Chicken Stock
  • 1/4 Cup Bulgur
  • 1 Tablespoon Mint
  • Salt And Pepper -- To Taste
  • Lemon Wedges
Directions Saute onion and garlic in olive oil and butter for 5 minutes. Add tomatoe paste, tomatoes, paprika, red pepper, lentils, rice and stock. Boil, simmer 30 minutes. add bulgur, mint, salt and pepper, simmer 10 minutes. serve with lemon wedges.
