Turkish   -   Sole Stuffed With Pine Nuts   adapted from The Sultan's Kitchen by Ozcan Ozan

Ingredients
  • 1/4 Cup Olive Oil
  • 1/4 Cup Pine Nuts
  • 1/2 Bunch Scallion -- Chopped
  • 12 Ounces Spinach -- Chopped
  • 4 Cloves Garlic -- Chopped
  • 4 Large Sole Or Flounder Fillets
  • Salt And Pepper -- To Taste
  • 3 Tablespoons Butter
  • 2 Teaspoons Paprika
  • 1 Teaspoon Red Pepper Flakes
  • 1 Can Tomatoes -- Diced
  • 3/4 Cup White Wine
  • 1 Lemon Lemon Juice
  • 1 Tablespoon Dill
  • 1/2 Bunch Parsley -- Chopped
Directions saute pine nuts in oil 5 minutes. Add scallions, spinach and garlic, saute 4 minutes, remove from heat. Season fish with salt and pepper, place spinach mixture evenly on fish fillets, fold over ends to enclose. set aside. Melt butter, add paprika, red pepper, tomatoes, wine, lemon juice, bring to a boil, lower fish into sauce, sprinkle with dill, cover and simmer for 8 minutes. sprinkle with parsley and serve with rice.
