Turkish   -   Tomato With Orzo Soup   adapted from The Sultan's Kitchen by Ozcan Ozan

Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- Chopped
  • 2 Cans Tomatoes -- Diced
  • 1 Can Tomato Paste
  • 1/2 Teaspoon Thyme
  • 1/4 Teaspoon Sugar
  • 1 Small Bell Pepper -- Chopped
  • 2 Stalks Celery -- Chopped
  • 4 Cups Chicken Stock
  • 1/4 Cup Orzo
  • Salt And Pepper -- To Taste
  • 4 Ounces Kasseri Cheese -- Grated
Directions saute onion in oil for 5 minutes. add tomatoes, tomatoe paste, thyme and sugar, simmer 5 minutes. add pepper, celery and stock. boil, simmer 20 minutes. add orzo, simmer until cooked, about 15 minutes. season with salt and pepper. sprinkle with cheese and serve.
