Turkish - Tomato With Orzo Soup

Ingredients

- 2 Tablespoons Olive Oil
- 1 Large Onion -- Chopped
- 2 Cans Tomatoes -- Diced
- 1 Can Tomato Paste
- 1/2 Teaspoon Thyme
- 1/4 Teaspoon Sugar
- 1 Small Bell Pepper -- Chopped
- 2 Stalks Celery -- Chopped
- 4 Cups Chicken Stock
- 1/4 Cup Orzo
- Salt And Pepper -- To Taste
- 4 Ounces Kasseri Cheese -- Grated

Directions
|
saute onion in oil for 5 minutes. add tomatoes, tomatoe paste, thyme and sugar, simmer 5 minutes. add pepper, celery and stock. boil, simmer 20 minutes. add orzo, simmer until cooked, about 15 minutes. season with salt and pepper. sprinkle with cheese and serve.
