Turkish   -   Turkish Noodle Soup With Mint   adapted from Soup and Bread by Crescent Dragonwagon

  • 1 Teaspoon Flour
  • 3 Cups Yogurt
  • 1 Large Egg -- Beaten
  • 4 Cups Chicken Stock
  • 4 Ounces Vermicelli -- Broken
  • 2 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 5 Cloves Garlic -- Chopped
  • 1/2 Cup Mint -- Chopped
  • Salt And Pepper -- To Taste
  • Romano Cheese -- To Taste
Directions Mix flour with yogurt. Add egg and stock, beat well. Bring to a simmer, add pasta and simmer for 10 minutes. Saute onion in butter for 5 minutes. Add garlic and mint. Saute for 1 minute. Add to the soup. Simmer for 5 minutes. Add salt and pepper. Simmer for 1 minute. Serve topped with romano.
