Turkish   -   White Bean And Vegetable Soup   adapted from The Sultan's Kitchen by Ozcan Ozan

Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- Diced
  • 3 Cloves Garlic -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Can Tomato Paste
  • 1 Can Great Northern Beans
  • 1 Quart Chicken Stock
  • 1 Large Carrot -- Diced
  • 2 Stalks Celery -- Diced
  • 1/2 Teaspoon Red Pepper Flakes
  • 1/4 Cup Cornstarch
  • Salt And Pepper -- To Taste
  • 1/2 Bunch Parsley -- Chopped
Directions saute onion and garlic in oil until brown. add tomatoes, tomatoe paste, beans and stock. simmer, 15 minutes. add carrot, celery and red pepper flakes, cook 30 minutes. Mix cornstarch with 1/2 cup water. stir into soup. season with salt and pepper, simmer 10 minutes. sprinkle with parsley and serve.
