Ingredients
  • 1 Tablespoon Olive Oil
  • 1 Pound Turkey Sausage -- Sliced
  • 5 Cloves Garlic -- Chopped
  • 3 Quarts Chicken Stock
  • 3 Tablespoons Old Bay Seasoning
  • Salt -- To Taste
  • 2 Medium Bay Leaves
  • 6 Medium Red Potatoes -- Cubed
  • 12 Ounces Corn
  • 1 Can Tomatoes -- Chopped
  • 2 Pounds Crayfish Or Shrimp -- In The Shell
  • 1 Bunch Scallion -- Chopped
Directions Saute sausage in oil for 5 minutes. Add garlic and saute for 1 minute. Add broth, Old Bay seasoning, salt and bay leaves. Simmer for 10 minutes. Add potatoes and simmer for 15 minutes. Add corn, tomatoes, crayfish or shrimp and cook for 5 minutes. Ladle into bowls, sprinkle with scallions and serve.
