US Regional   -   Blueberry Cobbler   adapted from iron pots and wooden spoons

  • 2 Cups Blueberries
  • 1 1/8 Cups Sugar
  • 1 Teaspoon Lemon Juice
  • 3 Tablespoons Butter
  • 1 Cup Flour
  • 2 Teaspoons Baking Powder
  • 3/4 Teaspoon Salt
  • 1 Medium Egg -- beaten
Directions wash and pick over berries removing stems. place berries, 1 cup of sugar and lemon juice in a well greased deep dish pyrex baking dish. dot berries with butter. sift together remaining dry ingredients and blend with beaten egg. chill in frezer for a few minutes and preheat oven to 375 roll out dough on a floured surface. place on top of berries. bake 30 minutes or until hot.
