US Regional   -   Boston Baked Beans   adapted from unknown

  • 1/2 Teaspoon Baking Soda
  • 1 Cup Navy Beans
  • 1 Tablespoon Cider Vinegar
  • 6 Tablespoons Dark Molasses
  • 1/2 Cup Brown Sugar
  • 3 Teaspoons Dry Mustard
  • Salt And Pepper -- to taste
  • 1/2 Pound Bacon -- chopped
  • 1 Large Yellow Onion -- chopped
Directions Dissolve baking soda in 2 cups of water. Add Beans, soak overnight. Drain and rinse beans. Mix vinegar, molasses, sugar, mustard, salt and pepper, and 2 cups of hot water in a medium sized bowl. Layer bacon, onion and beans in the bottom of a casserole dish. Pour Sauce over. Cover, bake 4 hours at 300*. Stirring once per hour. Remove lid, and bake utnil desired sauce consistency is reached, another 1-2 hours.
