US Regional - Cheesehead Chile Rice

Ingredients
|
- 1/4 Cup Butter
- 1 Large Onion -- chopped
- 4 Cups Cooked Rice
- 2 Cups Sour Cream
- 1 Cup Cottage Cheese, Creamed
- 1 Large Bay Leaf -- crumbled
- Salt And Pepper -- to taste
- 3 Cans Green Chiles
- 2 Cups Cheddar Cheese -- shredded
- Parsley -- for garnish

Directions

preheat oven to 375 degrees. lightly grease a 12x8 inch baking dish. In a 2 quart saucepan, saute onion in butter until golden. remove from heat. stir in rice, sour cream, cottage cheese, bay leaf, salt and pepper. mix well. layer half of mixture in prepared dish. sprinkle all of the chiles and half of the cheese. top with remaining rice and the cheese. sprinkle with parsley and bake for 30 minutes.
