US Regional   -   Country Potatoes   adapted from taste of iowa

  • 8 Large Potato -- cooked
  • 1 Tablespoon Olive Oil
  • 1 Medium Green Pepper -- chopped
  • 1 Medium Onion -- chopped
  • 1 Can Stewed Red Ripe Tomatoes
  • 8 Ounces Mushroom -- chopped
  • Salt And Pepper -- to taste
  • 1/2 Cup Sharp Cheddar Cheese -- shredded
Directions cut unpeeled cooked potatoes into cubes and place in large baking dish. saute onion and pepper in olive oil until onion is transparent. spread over potatoes. add remaining ingredients except cheese and mix well. top with cheese, cover with foil and bake at 350 degrees for 25 minutes. remove foil and bake for 20 more minutes or until cheese and potatoes are browned.
