US Regional   -   Fiery Black Eyed Pea Salad   adapted from The Occasional Vegetarian

  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Sherry Vinegar
  • Salt And Pepper -- to taste
  • 1 1/2 Cups Blackeyed Peas -- cooked
  • 1 Small Red Onion -- chopped
  • 1 Small Red Bell Pepper -- chopped
  • 2 Teaspoons Jalapeno -- roasted or fresh
  • 1/4 Cup Cilantro -- chopped
  • 1 Bunch Arugula -- or other greens
Directions combine oil, vinegar, salt and pepper. warm black eyed peas over low heat. remove from heat and add onion, pepper, jalapeno and cilantro. Toss with oil mixture. serve over bed of arugula or other greens.
Serves 2
