US Regional   -   Fish Baked In Ti Leaves   adapted from Hawaii Cookbook by Pacifica House

  • 4 Medium Fish Fillet -- Any Kind
  • 1 Teaspoon Salt
  • 1 Medium Onion -- Chopped
  • 1 Teaspoon Parsley -- Chopped
  • 1 Tablespoon Olive Oil
  • 1/2 Teaspoon Salt
  • Pepper -- To Taste
  • 1 Cup Bread Crumbs
  • 1/4 Cup Chicken Broth
  • 4 Slices Bacon
  • Ti Leaves, Corn Husks Or Foil
Directions Rub fish with salt. Let stand 5 minutes. Combine onion, parsley, oil, salt, pepper, bread crumbs and broth. Bread fish in this mixture. Wrap a slice of bacon around the fish, then wrap in leaves, corn husks or foil. Bake on oiled baking sheet at 325 degrees for 20 minutes per pound of fish.
