US Regional   -   Fish Fillets With Lemon And Capers (Massachusetts)   adapted from Sarah Leah Chase's Cold-Weather Cooking

  • 3 Tablespoons Olive Oil
  • 1 Clove Garlic -- Chopped
  • 5 Tablespoons Butter
  • 1/2 Cup Bread Crumbs
  • 4 Large Flounder Fillet
  • Salt And Pepper -- To Taste
  • 1 Lemon Lemon Juice
  • 2 Tablespoons Capers
  • 2 Tablespoons Dill -- Chopped
Directions Saute garlic and bread crumbs in oil for 7 minutes or until browned. Set aside. Season fish with salt and pepper. Saute in butter for 4 minutes per side. Add lemon juice and capers. Saute for 1 minute, add parsley and saute for 30 seconds. Serve sprinkled with the bread crumbs.
Serves 4
