US Regional   -   Fried Bean Cakes (South Carolina)   adapted from Hoppin' John's Low Country Cooking by John Martin Taylor

  • 3 Cups Refried Beans
  • 1 Large Egg
  • 1 Teaspoon Thyme
  • 1 Tablespoon Basil
  • 1 Tablespoon Oregano
  • 1 Small Red Onion -- Chopped
  • 4 Cloves Garlic -- Chopped
  • 1 Bunch Scallion -- Chopped
  • 1 Medium Jalapeno -- Roasted, Chopped
  • Flour
  • 3 Tablespoons Olive Oil
Directions Mix together all ingredients but flour and oil. Form into patties. Coat with flour and saute in oil for 4 minutes per side. Serve like a burger.
