US Regional   -   Fried Okra   adapted from iron pots and wooden spoons

  • 1 Pound Fresh Okra -- topped and tailed
  • 2 Medium Tomatoes -- chopped
  • 1 Cup Yellow Corn Meal
  • 1/3 Cup Peanut Oil
  • Salt And Pepper -- to taste
Directions wash okra and cut into 1/2 inch rounds. add chopped tomatoes and cornmeal. stir in and make sure all okra is well coated with cornmeal. heat oil in large heavy skillet. fry ingredients for 5 minutes. turn over and fry until all ingredients are crisp and brown all over.
Serves 6
