US Regional   -   Haddock With Mustard Crumbs (Massachusetts)   adapted from Sarah Leah Chase's Cold-Weather Cooking

  • 3 Tablespoons Butter
  • 2 Medium Shallot -- Chopped
  • 1/2 Cup White Wine
  • 4 Large Haddock Fillet
  • 1 Lemon Lemon Juice
  • Salt And Pepper -- To Taste
  • 2 Teaspoons Dijon Mustard
  • 1 Cup Bread Crumbs
  • 3 Tablespoons Parsley -- Chopped
Directions Place butter on the bottom of a baking dish. Sprinkle in shallots and pour in the wine. Place fish on top. Sprinkle with lemon juice, salt and pepper. Combine mustard, bread crumbs and parsley. Press onto the fish. Bake for 20 minutes at 400 degrees.
Serves 4
