US Regional   -   He Yahoni We (Blue Corn Pancakes)   adapted from Idonapshe-Lets Eat Traditional Zuni Foods by Rita Edaakie

  • 2 Cups Blue Cornmeal
  • 1/2 Cup Flour
  • 1/2 Teaspoon Salt
  • 1 1/2 Teaspoons Baking Powder
  • 1/2 Cup Evaporated Milk
  • 1 Cup Water
Directions Combine dry ingredients, pour in milk and water. Stir, adding water if necessary to make a thin batter. Cook on griddle for about 3 minutes per side and top with syrup, jam or honey.
