Ingredients
  • 3 Strips Bacon -- Chopped
  • 2 Pounds Venison -- Chopped
  • 1 Pound Pork -- Chopped
  • 6 Cloves Garlic -- Chopped
  • 2 Large Onion -- Chopped
  • 3 Medium Ancho Chili Peppers -- Roased, Chopped
  • 2 Medium Poblano Peppers -- Roased, Chopped
  • 4 Cups Black Beans -- Cooked
  • 6 Tablespoons Chili Powder
  • 4 Tablespoons Cumin
  • 1 Teaspoon Salt
  • 3 Cups Tomatoe Sauce
  • 2 Cups Beef Broth -- Hot
  • 1/2 Cup Epazote -- Chopped
  • 1 Teaspoon Oregano
  • 1 Teaspoon Paprika
  • 3 Tablespoons Cider Vinegar
Directions add meats to pan; brown on all sides; add garlic and onions; saute 5 minutes; add chilis; saute 2 minutes; add beans, chili powder, cumin, salt, tomatoe sauce and broth; stir well; cover, simmer 1 hour
add herbs, paprika and vinegar; stir, simmer 15 minutes; serve with big loaf of crusty bread
