US Regional   -   Jerry's Lemon Grass Chicken (Hawaii)   adapted from Fiery Foods that I Love

  • 1 Tablespoon Dark Brown Sugar
  • 1 1/2 Teaspoons Salt
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Ground Ancho Pepper
  • 1 Teaspoon Ground Guajillo Pepper
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon White Pepper
  • 4 Medium Chicken Breast Halves
  • 1 Tablespoon Olive Oil
  • 1 Large Lemon Grass Stalk -- slice diagonally
  • 3 Tablespoons Fish Sauce
  • 2 Cloves Garlic -- sliced
  • 1/2 Cup Chicken Stock
  • 1 Tablespoon Fresh Parsley
Directions combine seasoning mix in small bowl. slice each chicken breast crosswise and then slice diagonally in 2 inch strips. sprinkle seasoning mix over chicken. mash lemon grass. heat oil and lemon grass over high heat about 1 minute. add chicken stirring constantly. make sure lemon grass does not burn about 2 minutes. Stir in fish sauce, garlic and stock. Cook for 8 minutes. remove lemon grass from the sauce, stir in parsley. Serve hot with rice or noodles.
