US Regional   -   K'Yawaho We (Chile Stew With Potatoes)   adapted from Idonapshe-Lets Eat Traditional Zuni Foods by Rita Edaakie

  • 2 Pounds Meat -- Any Kind
  • 2 Tablespoons Olive Oil
  • 8 Cups Chicken Or Beef Stock
  • 8 Medium Potatoes -- Cubed
  • 2 Large Red Chiles -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 2 Tablespoons Coriander
  • 1 Cup Water
Directions Brown meat in oil. Add broth and bring to a boil. Add chiles, garlic, coriander and water to a blender. Puree, add to the stew. Add potatoes and simmer for 20 minutes. Serve.
