Ingredients
  • 2 Tablespoons Olive Oil
  • 1/2 Pound Tempeh Bacon -- diced
  • 1 Large Vidalia Onion -- chopped
  • 2 Cups Rice -- cooked
  • 1 Cup Hot Salsa
  • 2 Teaspoons Lemon Juice
  • 2 Teaspoons Worcestershire Sauce
  • Salt And Pepper -- to taste
  • 1/4 Teaspoon Cayenne
  • 2 Cups Chickpeas -- cooked
  • 1/4 Cup Parsley -- finely chopped
Directions Saute in oil bacon and onion until brown, about 5 minutes. Add cooked rice to onions. Allow rice to brown. About 5 minutes. Add remaining ingredients. Simmer 10 minutes and serve.
