Ingredients
  • 4 Slices Bacon -- Chopped
  • 1 Large Onion -- Chopped
  • 5 Cloves Garlic -- Chopped
  • 2 Pounds Beef Or Lamb -- Cubed
  • 2 Cups Beef Broth
  • 2 Cans Tomatoes With Green Chilis -- Chopped
  • 1 Can Green Chile -- Chopped
  • 1/2 Teaspoon Oregano
  • 1/2 Teaspoon Cumin
  • 1 Cup Anasazi Beans, Cooked -- Or Pinto
  • Salt And Pepper -- To Taste
Directions Saute bacon until crisp, add onion and cook for 5 minutes. Add garlic, saute for 2 minutes. Add meat and brown. Add tomatoes, chiles, oregano and cumin. Simmer for 1 hour. Add beans, broth, salt and pepper. Simmer for 10 minutes. Serve with tortillas.
