Ingredients
|
- 4 Slices Bacon -- Chopped
- 1 Large Onion -- Chopped
- 5 Cloves Garlic -- Chopped
- 2 Pounds Beef Or Lamb -- Cubed
- 2 Cups Beef Broth
- 2 Cans Tomatoes With Green Chilis -- Chopped
- 1 Can Green Chile -- Chopped
- 1/2 Teaspoon Oregano
- 1/2 Teaspoon Cumin
- 1 Cup Anasazi Beans, Cooked -- Or Pinto
- Salt And Pepper -- To Taste

Directions
|
Saute bacon until crisp, add onion and cook for 5 minutes. Add garlic, saute for 2 minutes. Add meat and brown. Add tomatoes, chiles, oregano and cumin. Simmer for 1 hour. Add beans, broth, salt and pepper. Simmer for 10 minutes. Serve with tortillas.
