Ingredients

- 1/4 Cup Olive Oil
- 3 Slices Bacon
- 1 Large Onion -- Finely Chopped
- 4 Cloves Garlic -- Finely Chopped
- 2 Pounds Ground Beef
- 2 Cups Beef Broth
- 2 Cups Tomatoes -- Diced
- 1 Large Poblano Peppers -- Roasted And Chopped
- 1 Teaspoon Cilantro
- 1 Teaspoon Oregano
- 1 Teaspoon Cumin
- 1 Cup Pinto Beans -- Cooked
- Salt And Pepper -- To Taste
- 2 Cups Lettuce -- Torn
- 1/2 Cup Carrots -- Shredded
- 1/2 Cup Green Onion -- Chopped
- 1 Cup Cheddar Cheese -- Grated
- Tortillas

Directions
|
Heat oil in skillet, cook bacon, onion and garlic until onion is tender. Add beef and brown. Add beef broth, tomatoes, peppers, herbs, seasonings and beans. Stir and simmer for 30 minutes. Blend lettuce, carrots, onions and cheese in a bowl. Make tacos.
