US Regional   -   Porcupine Meatballs   adapted from Native Indian Wild Game, Fish and Wild Foods by Lovesick

  • 1 Pound Ground Venison
  • 1/2 Cup Rice
  • 1/2 Cup Water
  • 1 Small Onion -- Chopped
  • 1 Teaspoon Salt
  • 1 Teaspoon Celery Salt
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Pepper
  • 1 Can Tomato Sauce
  • 1 Cup Water
  • 2 Teaspoons Worcestershire Sauce
Directions Mix together all ingredients except tomato sauce, form into small balls and saute on all sides. MIx remaining ingredients, pour over meatballs, boil, cover, reduce heat, simmer 45 minutes. serve over rice or pasta.
