US Regional   -   Pork Medallions   adapted from taste of iowa

  • 1 Pound Pork -- sliced
  • Salt And Pepper -- to taste
  • 1 Tablespoon Olive Oil
  • 1 Medium Onion -- chopped
  • 1 Medium Jalapeno -- chopped
  • 1 Medium Red Pepper -- chopped
  • 1 Teaspoon Garlic
  • 2 Tablespoons Chicken Broth
Directions saute onions, garlic and peppers in olive oil until onion is transparent. add pork and saute for 5 minutes on each side. add chicken broth and simmer for 3 minutes and serve with rice.
