US Regional   -   Raspberry Flapjacks With Hot Maple Syrup (Navajo)   adapted from Enduring Harvest by Kavasch

  • 1 1/2 Cups Fine Cornmeal
  • 1/4 Cup Flour
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Baking Powder
  • 2 Cups Buttermilk
  • 2 Tablespoons Raspberry Jam
  • 1 Medium Egg -- Beaten
Directions Place dry ingredients in a medium bowl. Warm the buttermilk in a small saucepan, dissolve the jam into the buttermilk. Then combine with the dry ingredients. Allow to cool and rest for a few minutes or until the egg won't cook from the heat of the buttermilk. When cool, add egg and stir. Drop batter onto a griddle and cook. Serve with more jam or hot maple syrup.
