US Regional   -   Roast Chicken With Sweet Wine, Potatoes (Massachusetts)   adapted from Sarah Leah Chase's Cold-Weather Cooking

  • 6 Pounds Chicken -- In 1 Piece
  • 3 Cloves Garlic -- Chopped
  • 1 Lemon Lemon Juice
  • 2 Tablespoons Olive Oil
  • Salt And Pepper -- To Taste
  • 2 Large Onion -- Chopped
  • 4 Large Red Potatoes -- Quartered
  • 2 Cups Sweet Wine Or Dessert Wine
Directions Place garlic in cavity of bird. Squeeze lemon juice over chicken. Place lemon shells inside the bird. Rub bird with salt, pepper and olive oil. Place in roasting pan and bake for 45 minutes at 350 degrees. Scatter onions and potatoes in roasting pan. Pour in the wine. Increase heat to 375. Cook for 1 hour. Let rest 10 minutes and serve.
