US Regional   -   Root Soup   adapted from new pioneer coop

  • 2 Small Turnip -- peeled
  • 2 Large Potatoes -- peeled
  • 2 Medium Parsnips -- peeled
  • 2 Medium Carrots -- peeled
  • 2 Medium Onion -- chopped
  • 1/2 Cup Parsley -- chopped
  • 1/3 Cup Barley
  • 4 Cups Broth
  • 1 Tablespoon Basil
  • 2 Dashes Hot Pepper Sauce
  • 1/2 Teaspoon Curry Powder
  • Salt And Pepper -- to taste
  • 1 Teaspoon Dill Weed
Directions Grate the turnips, parsnips, carrots and onion by hand or in a food processor. Put the grated vegetables in a large saucepan. Add parsley, barley, broth, and basil. Bring the soup to a boil. Reduce the heat. Cover the pan and simmer for 1 to 2 hours. Check the soup periodically and add water is needed. Stir in the pepper sauce and remaining spices before serving.
