US Regional   -   Rosemary Swiss Steak   adapted from taste of iowa

  • 1 Pound Round Steak
  • 2 Teaspoons Olive Oil
  • Salt And Pepper -- to taste
  • 1/2 Teaspoon Rosemary -- dried
  • 1 Tablespoon Dijon Mustard
  • 3 Large Tomatoes -- chopped
  • 1 Large Onion -- chopped
  • 1/2 Cup Water
Directions Saute onion and steak in olive oil, until steak is browned on both sides. Spread mustard on top side of steak and add remaining ingredients. cover and simmer for 1 1/4 hours adding more water if needed.
Serves 4
