US Regional   -   Shrimp Fried Wild Rice (Minnesota)   adapted from Sarah Leah Chase's Cold-Weather Cooking

  • 4 Tablespoons Olive Oil
  • 2 Teaspoons Sesame Oil
  • 1 Bunch Scallion -- Chopped
  • 1 Medium Red Bell Pepper -- Chopped
  • 2 Medium Jalapeno -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1 Tablespoon Ginger
  • 1 Pound Shrimp
  • 4 Cups Wild Rice -- Cooked And Chilled
  • 1 Cup Bean Sprouts
  • 3 Large Eggs -- Beaten
  • 4 Tablespoons Soy Sauce
  • Hot Sauce -- To Taste
  • 3 Tablespoons Cilantro -- Chopped
Directions Saute scallions, bell pepper, jalapenos, garlic and ginger in both oils for 3 minutes. Add shrimp and continue to cook for 3 minutes. Remove from skillet and set aside. Add rice and saute for 4 minutes. Add bean sprouts and saute for 1 minute. Stir in eggs and cook until eggs have set. Add the shrimp mixture. Season with soy sauce and hot sauce. Reheat and serve sprinkled with cilantro.
