Ingredients
  • 4 Slices Bacon -- Chopped
  • 1 Medium Onion -- Chopped
  • 1 Clove Garlic -- Chopped
  • 1 Cup Rice
  • 1 1/2 Cups Chicken Stock
  • 1 Teaspoon Worcestershire Sauce
  • 1/4 Teaspoon Cayenne
  • 2 Teaspoons Salt
  • 1 Can Tomatoes -- Chopped
  • 1 Pound Shrimp -- Shelled
  • 1 Tablespoon Parsley -- Chopped
Directions Saute bacon until fat renders. Saute onions until browned. Add rice and stir well. Add stock, worcestershire sauce, pepper, salt and tomatoes. Bring to a boil, then place in ovenproof dish. Bake in 350 degree oven for 30 minutes. Add shrimp, stir well and bake for 10 minutes more. Sprinkle with parsley and serve.
