US Regional   -   Succotash Chicken Soup   adapted from Betty Crockers New International Cookbook

Ingredients
  • 1/2 Pound Chicken Breast -- chopped
  • 1 Medium Onion -- chopped
  • 1 Small Bell Pepper -- chopped
  • 3 Cloves Garlic -- chopped
  • 1 Cup Frozen Corn
  • 1/4 Cup Fresh Parsley -- chopped
  • 4 Cups Water
  • 1 Tablespoon Worcestershire Sauce
  • 1/2 Teaspoon Thyme
  • 1/4 Teaspoon Cayenne
  • 1 Can Tomatoes -- undrained
  • 9 Ounces Frozen Lima Beans
  • 1/2 Cup Water
  • 3 Tablespoons Flour
Directions saute in nonstick spray, chicken, onion, bell pepper and garlic until chicken is done. Add remaining ingredients except 1/2 cup water and flour. heat to boiling. mix flour and water together and gradually stir into soup. reduce heat and simmer until it thickens.
Serves 6
