Ingredients
  • 4 Tablespoons Butter
  • 1 Large Onion -- Chopped
  • 2 Stalks Celery -- Chopped
  • 3 Medium Carrots -- Chopped
  • 4 Ounces Mushroom -- Chopped
  • 3 Tablespoons Flour
  • 5 Cups Chicken Stock
  • 3 Cups Wild Rice -- Cooked
  • 1 Teaspoon Thyme
  • 3 Tablespoons Sherry
  • Salt And Pepper -- To Taste
Directions Saute onion, celery and carrots in butter for 5 minutes. Add mushrooms and saute for 3 minutes. Sprinkle in flour, stir well and saute for 1 minute. Add stock and thyme. Cover and simmer for 15 minutes. Add sherry and rice. Simmer for 1 minute. Season with salt and pepper and serve.
