Uzbek   -   Guishit Palov (Bukharen Beef Plov)   adapted from The Art of Uzbek Cooking by Lynn Visson

  • 3 Tablespoons Olive Oil
  • 3 Large Onion -- Chopped
  • 2 Pounds Beef -- Cubed
  • 6 Large Carrot -- Chopped
  • 2 1/2 Cups Rice
  • 3 Cups Beef Stock
  • Salt And Pepper -- To Taste
  • 2 Teaspoons Turmeric
  • 2 Teaspoons Cumin
Directions Saute onions and beef in oil until the beef is browned. Add carrots, rice and stock. Sprinkle with salt, pepper, turmeric and cumin. Stir gently. Bring to a boil and simmer, covered for 30 minutes. Remove from heat and let stand 5 minutes. Serve.
