Uzbek   -   Guisht Nukhot (Lamb With Chickpeas)   adapted from The Art of Uzbek Cooking by Lynn Visson

Ingredients
  • 3 Tablespoons Butter
  • 2 Pounds Lamb -- Cubed
  • 1 Can Chickpeas
  • 1 Cup Beef Broth
  • 1 Can Tomatoes -- Chopped
  • 1 Can Tomato Paste
  • Salt And Pepper -- To Taste
  • 1/4 Cup Parsley -- Chopped
Directions Saute lamb in butter until browned. Add chickpeas and simmer for 5 minutes. Add broth, tomatoes and tomato paste. Season with salt and pepper. Cover and simmer for 30 minutes. Add parsley and serve.
